Chocolate is a way of life for Andrew Thwaite.  He is never happier than when he’s working with it, talking about it, learning about it or sharing his sweet skills with other people.  His passion is enriching other people’s lives with chocolate and he’s done that successfully for more than 20 years. During his career he’s been a manager, a strategist, a consultant and a teacher but above all he’s remained a natural-born chocolatier

We are delighted that Andrew has agreed to run two classes for us, this class concentrating on working with chocolate and a second combining chocolate basics and macaron making.

Working with Chocolate will cover:

  • Where cocoa comes from and how chocolate is made
  • The differences between chocolate and Andrew ThwaiteCouverture.
  • Chocolate tempering and how to test the chocolate for set and snap
  • The basics of making a ganache
  • Making moulded chocolates and use various decorative techniques
  • Make and decorate an Easter egg using moulds and transfer moulds
  • Learn how to assemble and decorate the egg
  • How to produce chocolate trufflesChocs Andrew
  • Learn how to dip and decorate truffles
  • Make caramels and butter ganache
  • The use of flavours
  • Where to source ingredients


The session will be hands on and demo led with plenty of opportunities to pick up tips and ask questions along the way

Each student  will receive a copy of Andrew’s book “Working with Chocolate” and will take home all items made in suitable gift packaging

The December class will have a Christmas theme.
