We are thrilled to announce that BBC Masterchef finalist Afsaneh Kaviani will be joining us to run a one day class showcasing the vibrant and deliciously tasty foods of Persia. 

Afsaneh is a private chef and runs sell out supper clubs in and around Leeds. Since appearing on Masterchef, which she describes as a life changing experience, she has gone on to work with some of the country’s top chefs gaining a wealth of experience along the way.

 

Afsaneh will guide you through an exciting menu where the emphasis will be on traditional dishes from her home country with a modern twist.

Menu

  • Nokhod zireh – Chickpea and cumin stew with optional spinach (you will learn about aromatic spicing and balancing the flavours)
  • Kuku- Fried vegetable patties (you will learn how to make the basic mix for Kuku and how to add you own choice of flavours/ingredients to create your own patties).
  • Masteh kiseh –  Afsaneh will show you how to make strained yoghurt  and a couple of yoghurt base dips.
  • Morgheh loghmeh- Saffron chicken bites (use of saffron in different dishes)
  • Afsaneh will show you how to do Persian layered rice with toppings as well as Tahdig (crunchy rice)

 

Class notices

The class includes a light lunch of dishes made, the rest will be yours to take home.
