We are delighted that chef, restaurateur and Westminster College cookery lecturer Martin Heap will be delivering a one day masterclass in sausage making.
Martin’s Simply Sausages brand was born in 1991 in Smithfield Market, the original London home of meat. The Simply Sausage shop sold 24 varieties of sausage, all created with one aspiration in mind: to be, quite simply, the best sausage you are likely to taste. After just one day of trading, queues were forming around the block to buy Martin’s affordable, yet luxurious sausages. In fact, the sausages became so popular that new queuing systems were installed and coffee served while you waited!
In 1995, Martin joined Yorkshire based Cranswick plc to form the Cranswick Gourmet Sausage Company. Partnering with Cranswick has brought the unique tastes to the nation!
With a chef’s and restaurateur’s background, Martin Heap has travelled the world looking for authentic recipes and inspiration for new flavours and ideas for you to try. He is passionate about using the very best of British ingredients with prime whole cuts from the shoulder and belly which is then carefully garnished with fresh seasonal herbs, spiced and filled into natural casings.

You Will learn the following techniques: processing of different mixes, mixing times, filling techniques, linking, proving/hanging
With Martin’s supervision students will prepare from start to finish a sausage of their own choice and take home approximately 2 kilos of sausages
Demonstration of the complete preparation of a classic “English style” breakfast/all day rich pork sausage, lamb sausage plus 1 garnished sausage (eg boerewors or pork pancetta and Parmesan)
The class includes a light lunch.
