Always wanted to create the delicate pastries we see in French Patisserie shops?  Well now is your chance!  This class will give you an introduction to the meaning and history of Patisserie and the Flours, Fats, Sugars, Raising Agents, Eggs, Milk, Cream used in their creation.

You will be guided through a range of techniques to create four wonderful treats:

  • Fruit Tartlet – short pastry
  • Gateau Paris Brest – choux pastry, crème diplomate, praline
  • Mille-Feuilles – puff pastry slice
  • Filo Pastry Mini Cream Cups

Techniques Covered

The process of adding flour to fat

  • Rubbing in (short pastry)
  • Creaming (sweet pastry)
  • Lamination (puff pastry)
  • Boiling (choux pastry)

The techniques of preparing pastry

  • Rolling (short, sweet)
  • Cutting (short, sweet, puff)
  • Piping (choux)
  • Glazing (gels, jams, egg wash)
  • Blind Baking (Filo pastry)

Finishing and presenting  pastry products

  • Dusting (icing sugar, cocoa)
  • Piping (crème patisserie)
  • Filling (whipped cream,)
  • Garnishing (decorative fruit, spun sugar, praline, quenelle, chocolate tempering)
