A class designed to take advantage of in season, locally sourced game. Learn more about this underused but wonderful food. Your freezer need never have a pheasant languishing in it again!

Class details

An introduction to the sourcing, preparation, flavours and uses of traditional game meats. Refresh your existing knowledge and gain new ideas for cooking game and pairing it with wines and seasonal vegetables.

The Class will Cover:

  • Skinning and portioning a Pheasant
  • Pan frying, tasting and wine pairing for a selection of different game meats (Wild Duck, Venison, Rabbit and Partridge)
  • Matching game with Seasonal Vegetables
  • Traditional and modern recipe ideas for game

Cooking

  • Venison with Red Wine and Chocolate Sauce
  • Potted Pheasant
  • Traditional Game Pie

The class includes a light lunch perhaps of dishes made.
