On this course you will learn how to clean, fillet, debone, season, cook and present fresh fish in five very different ways. This is a great introduction to preparing fish for newcomers alongside some new ideas for those more experienced.

Techniques demonstrated and acquired will include

  • Quality points and seasonal timings for purchasing fresh fish
  • Filleting whole mackerel, salmon and plaice
  • Skinning, deboning and portioning
  • Baking, Grilling, Steaming and Poaching fresh fish
  • Rolling, cutting and preparing fresh simple Sushi

 

Menu

Spiced and grilled fillets of mackerel – Fresh fillets of mackerel marinated in South American style spices served grilled with a radish salad and herby crème fraiche makes an ideal starter.

Baked Haddock Smokies – Un-died smoked haddock baked in cream with Parmesan Reggiano and vine tomatoes and served with melba toast makes a beautifully rich starter for any occasion – tutor demonstration

Salmon en croute – Prepared from whole fresh salmon filleted and skinned these puff pastry parcels of steamed salmon filled with ginger and samphire are a popular starter or main course.

Delice of Plaice Duglere – Classic poached white fish coated with a creamy white wine and parsley sauce made from home made fish stock and tomato concasse.

Simple Sushi, Fresh fish California rice rolls with Wasabi and pickled Ginger – a simple introduction to rolling, cutting and presenting your own sushi with fresh marinated fish and dipping sauce.
