This is the second class that Master Chocolatier Andrew Thwaite will be hosting. The morning session will concentrate on the art of making beautiful macarons. You will work in pairs to produce the mixture, colour and flavour it, then be taught how to make a classic ganache using a variety of flavours and fillings to finish their macarons and also a salted caramel.
After lunch you will cover tempering chocolate and how to make the ganache, using flavours, piping and other decorative techniques and simple chocolate based decorations for cakes which can be produced at home
The session will be hands on and demo led with plenty of opportunities to pick up tips and ask questions along the way. Each student will receive full course notes and recipes, and a box of finished Macarons as well as a copy of Andrew’s book “Working with Chocolate”.
The class includes lunch.
